A deep dive with Dale Harris: Innovation starts with Education
At Eversys, we believe that to build the future of coffee, we must never stop being curious. This philosophy drives us to look beyond the mechanics of our machines and focus on the artistry and science of the coffee itself.
In February, we hosted Dale Harris, one of our Global Brand Ambassadors at our HQ for an intensive, four-hour deep dive with our internal teams.
The goal was simple: elevation. From testing recipes to discussing the shifting needs of the modern barista, our team spent quality time "in the trenches" of sensory training. By understanding the minute details of what an end-user needs—whether it’s flavor consistency, workflow efficiency, or sensory precision—we can ensure our technology remains the best tool for the job.
Meet the Expert: Who is Dale Harris?
For those in the specialty coffee world, Dale Harris needs little introduction. A fixture in the industry for nearly two decades, Dale rose to global prominence when he was crowned the 2017 World Barista Champion in Seoul.

His winning routine was legendary for its focus on how aromatic compounds shape our perception of flavor, a testament to his methodical and science-driven approach to coffee.
But Dale is more than a champion competitor; he is a leader in coffee operations and education. For over a decade, Dale was a driving force at Hasbean, one of the UK’s most iconic specialty coffee roasters. Serving as Director of Wholesale and later General Manager, he was instrumental in shaping the brand’s reputation for ethical sourcing and flavor-led innovation.
Dale has dedicated himself to elevating the industry through knowledge sharing. He recently launched a comprehensive Coffee Masterclass, distilling years of expertise into a curriculum for the next generation of brewers.
Today, Dale is channeling his experience into his latest venture, Ithaka. Located in the heart of Birmingham, Ithaka represents a shift toward slow, intentional coffee service and genuine community connection.
It is more than just a cafe; it is the culmination of a career spent questioning how we experience coffee, moving away from the rush of the industry toward a more mindful, quality-focused ritual.
At the end of the day, our ambassadors are a vital resource in connecting technical excellence with the human experience of coffee.
